Texanized Keilbasa

Ingredients

20 lbs. ground meat, 25% fat
4 level teaspoons cure #1
1/2 cup canning/pickling salt
1/4 cup mustard seed
3 TBSP ground black pepper
3 TBSP ground cayenne pepper
2 tsp garlic powder
1 tsp marjoram
1 tsp sage

Process

Grind. Mix. Stuff. Smoke. Eat.
